Fluffy white chocolate chip and mixed berry blondies - irresistibly soft and unbelievably delicious!
Ingredients:
  • 0.5 cup unsalted butter, melted
  • 0.5 cup firmly packed brown sugar
  • 0.25 cup white sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon almond extract
  • 1.25 cups all-purpose flour
  • 0.25 teaspoon baking soda
  • 1 pinch ground nutmeg
  • 0.5 cup fresh blueberries
  • 0.5 cup fresh blackberries
  • 0.5 cup fresh raspberries
  • 0.5 cup sliced fresh strawberries
  • 0.5 cup white chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C), then line a 9x9-inch pan with parchment paper, ensuring it overhangs on all sides.
  • In a large bowl, use an electric mixer to combine melted butter, brown sugar, and white sugar until the mixture lightens. Add egg, vanilla, and almond extract and mix well. Stir in flour, baking soda, salt, and nutmeg until just combined. Carefully fold in berries and white chocolate chips.
  • Pour batter into the pan, then gently spread it out evenly.
  • Bake the blondies in the oven until they turn golden brown and set, which should take about 35 to 40 minutes. Let them cool completely in the pan, then easily lift them out using the parchment paper and cut into 16 squares.
