Indulgent mixed berry pie with creamy white chocolate topping.
Ingredients:
  • 4 cups frozen DOLE® Mixed Berries (from two 12-oz packages)
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 crust from 1 package (12 oz) frozen Pillsbury™ Deep Dish Pie Crusts (2 Count)
  • 1 tablespoon cold water
  • 1 teaspoon unflavored gelatin
  • 1 cup heavy whipping cream
  • 1/2 cup white vanilla baking chips (from 12-oz bag)
Instructions:
  • Preheat oven to 400°F and place a cookie sheet on the oven rack.
  • In a medium bowl, combine filling ingredients thoroughly. Spoon the mixture evenly into the frozen pie crust.
  • Place the pie on a cookie sheet and bake for 40 to 45 minutes, or until the filling is bubbly and the edges of the crust are golden brown. Cover the edges of the crust with foil for the last 20 minutes to avoid them getting too brown. Let the pie cool completely for about 1 1/2 hours.
  • In a small bowl, pour cold water and sprinkle gelatin over the top. Allow the gelatin to soften for about 10 minutes.
  • Heat 1/4 cup of whipping cream in a 1-quart saucepan over medium heat until hot. Lower the heat to medium-low, then add gelatin and baking chips. Stir constantly for 5 to 7 minutes until the mixture is smooth and the chips are melted. Take off the heat and let it cool for 25 minutes.
  • Whip 3/4 cup of whipping cream in a medium bowl using an electric mixer until stiff peaks form. Gently fold in the cooled gelatin mixture until fully combined. Spread the mixture evenly over the cooled pie and refrigerate for about 1 hour until the topping is set.
