Make easy and tasty ice-cream sandwiches with store-bought ingredients.
Ingredients:
  • 2 litres vanilla ice-cream
  • 108.90 gm raspberry jam
  • 5 x 52g Cherry Ripe chocolate bars, chopped
  • Red liquid food colouring
  • 24 milk chocolate wheaten biscuits
Instructions:
  • Transfer the ice-cream to a spacious bowl, keeping the tub aside. Allow it to sit for 10 minutes to soften without melting.
  • Gently fold in jam and Cherry Ripe. Add drops of food coloring to achieve a vibrant pink hue in the ice cream. Transfer the mixture back to the tub. Cover the surface with plastic wrap followed by the lid. Freeze for 6 hours or until the ice cream is firm.
  • Lay half of the biscuits with the plain side facing up on a board. Add a scoop of ice cream on top of each biscuit. Top with the remaining biscuits, chocolate side up. Enjoy right away or freeze for up to 1 month.
