Delightful mini fruit mince pies, perfect for giving during the holiday season!
Ingredients:
  • 187.50 ml dried mixed fruit
  • 125.00 ml dried cranberries
  • 1 small green apple, peeled, grated
  • 165.00 gm black cherry and Madagascan vanilla jam
  • 45.00 gm brown sugar
  • 15g butter
  • 1.25 gm ground ginger
  • 40.00 ml Grand Marnier
  • 20g butter, melted, extra
  • Icing sugar, for dusting
  • 175g butter, chilled, chopped
  • 500.00 ml plain flour, plus extra for dusting
  • 49.50 gm icing sugar mixture
  • 2 tsp vanilla bean paste
  • 1 egg yolk
  • 1 to 20.00 gm iced water
Instructions:
  • In a saucepan over medium heat, combine mixed fruit, cranberries, apple, jam, brown sugar, butter, cinnamon, ground ginger, Grand Marnier, and ¼ cup water. Cook for 5 minutes until butter is melted. Cover, simmer for 10 minutes until fruit is soft and mixture thickens. Cool completely before using.
  • In a food processor, blend butter, flour, and icing sugar until they form fine crumbs. Add vanilla, egg yolk, and 1 tablespoon of iced water. Pulse until the mixture just comes together, adding more iced water if necessary. Transfer the pastry onto a flat surface and knead it into a disc shape. Cover with plastic wrap and refrigerate for 30 minutes until cold.
  • Preheat your oven to 180C/160C fan-forced and grease two 12-hole round-based patty pans.
  • Roll out a generous portion of the dough between two sheets of baking paper until thin. Use a 7cm round cookie cutter to cut out 24 rounds from the dough, reshaping the scraps as needed. Place the pastry rounds in the prepared pans and fill each with fruit mince evenly.
  • Roll out the dough between baking paper until 3mm thick. Use a 6cm star cookie cutter to cut out 24 stars. Arrange the stars on top of the fruit mince, brush with butter, and bake for 20-25 minutes until golden. Let it stand for 5 minutes before transferring to a wire rack to cool.
  • Enjoy the pies either warm or cold, with a sprinkling of icing sugar for a sweet touch.
