Whip up some delightful handheld strawberry pies for a picnic favorite!
Ingredients:
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup cold butter, cut into pieces
  • 1/2 cup ice water
  • 1 1/3 cups finely chopped fresh strawberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon grated orange peel
  • 2 tablespoons orange juice
  • 1 egg, beaten
  • 1 tablespoon turbinado sugar (raw sugar)
Instructions:
  • Combine flour and salt in a food processor and pulse until mixed. Add butter and pulse until crumbly. While the food processor is running, slowly add ice water until dough forms. Divide dough in half, shape into rounds, wrap in plastic, and refrigerate for 30 minutes.
  • Preheat the oven to 425°F and prepare a baking sheet with parchment paper. Combine strawberries, sugar, cornstarch, orange peel, and orange juice in a 2-quart saucepan. Bring to a boil over medium heat and cook for 1 minute until thickened. Allow to cool for 10 minutes before using.
  • Roll out each pastry round on a floured surface until it's 1/8-inch thick. Use a 4-inch round cutter to cut out 6 rounds from each pastry. Place 6 rounds on a cookie sheet, making sure they are 2 inches apart. Spoon 1 heaping tablespoon of strawberry mixture onto the center of each round. Moisten the edges with water, then top with the remaining rounds. Press the edges with a fork, make slits on the tops, and brush with egg. Sprinkle with turbinado sugar. Bake for 15 minutes or until golden brown, then let them cool for 5 minutes.
