Ingredients:
  • 200g butter, softened
  • 2 tsp vanilla bean paste
  • 70.95 gm caster sugar
  • 375.00 ml plain flour
  • 65.00 gm rice flour
  • 165.00 gm strawberry jam
  • 50g butter, softened
  • 49.50 gm icing sugar mixture
Instructions:
  • Preheat your oven to 150C (130C fan-forced) and prepare 2 large baking trays by greasing and lining them with baking paper.
  • In an electric mixer, whip butter, vanilla, and sugar for 5 minutes until fluffy. Mix in flours. Roll 2 level teaspoons of dough into balls, flatten slightly into ovals, and place on a baking tray. Repeat with remaining dough, leaving space between each. Press the top gently with a fork to create the classic pattern.
  • Bake one tray at a time for 15 minutes, or until just firm but not browned. Let cool completely on the trays.
  • Prepare the Filling: With an electric mixer, whip butter until light and fluffy. Slowly mix in icing sugar until well combined. Spread 1 biscuit's flat side with 1/2 teaspoon jam and 1/2 teaspoon filling. Sandwich with another biscuit. Repeat with the rest of the biscuits, jam, and filling. Serve and enjoy!
