Create a beautiful berry muesli for a delightful dessert or brunch upgrade.
Ingredients:
  • 560g can of lychees in syrup, drained reserving 1/4 cup syrup
  • 4 black plums, chopped
  • 1 vanilla bean, halved, seeds scraped
  • 45.00 gm brown sugar, plus 1 tbsp extra
  • 125g fresh raspberries
  • 312.50 ml Carman's Original Fruit Free Muesli
  • 0.63 gm ground cinnamon
  • 60g butter
  • Vanilla ice-cream, to serve
Instructions:
  • Cut the lychees in half and combine them in a pan with the reserved syrup, plums, vanilla bean seeds, and 1 tablespoon of brown sugar. Mix well and bring to a boil. Cover and let it simmer over medium-low heat for 3 minutes. Take off the heat and gently fold in the raspberries.
  • In a bowl, combine 1 1/4 cups of Carman's Original Fruit Free Muesli with a sprinkle of cinnamon for added flavor.
  • In a saucepan over medium heat, melt 60g of butter until foaming and golden brown, for about 3-4 minutes. Remove from heat, then mix in 1/4 cup of brown sugar. Drizzle this mixture over the muesli and combine. Sprinkle crumble over the fruit and enjoy with a big scoop of vanilla ice cream.
