Nutritious muesli bars, perfect for lunchboxes.
Ingredients:
  • 115.00 gm vegetable oil
  • 89.38 gm honey
  • 4.40 gm vanilla extract
  • 1 egg
  • 90.00 gm firmly packed brown sugar
  • 375.00 ml wholemeal plain flour
  • 150.00 gm traditional rolled oats
  • 2.50 gm mixed spice
  • 1.25 gm bicarbonate of soda
  • 82.50 ml dried cranberries
  • 332.50 ml frozen raspberries
Instructions:
  • Preheat your oven to 190C (170C fan-forced), then grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, allowing the paper to extend 3cm above the long sides.
  • In a jug, vigorously whisk together oil, honey, vanilla, and egg. In a bowl, mix sugar, our, oats, mixed spice, and bicarbonate of soda. Create a hole in the center of the dry ingredients. Pour the oil mixture into the well and stir until well combined.
  • Spread two-thirds of the oat mixture evenly onto the base of the pan. Top with cranberries, raspberries, and the rest of the oat mixture. Bake for 20-25 minutes until golden and set. Allow to cool completely in the pan, then cut into bars and serve.
