Berry pie ice-cream sandwiches

Create delectable mixed berry ice-cream sandwiches with buttery shortcrust pastry.
Ingredients:
  • 500g vanilla ice-cream, softened
  • 250g mixed berries
  • 10.00 gm caster sugar
  • 10.60 gm lemon juice
  • 5.00 gm cornflour
  • 3 sheets frozen ready-rolled shortcrust pastry, just thawed
  • 1 Free Range Egg, lightly whisked
  • 10.00 gm caster sugar, extra
Instructions:
  • Transfer the ice-cream to a spacious bowl. Gently fold in 1 cup (150g) of the berries. Spread the mixture into a 7cm x 13cm loaf pan. Cover and freeze until firm.
  • Start by preheating the oven to 180C. Next, grease 2 large baking trays. Then, mix together the sugar, lemon juice, cornflour, and the rest of the berries in a small bowl.
  • Lay the pastry on a tidy work surface. Cut out 24 rounds using a 7.5cm pastry cutter. Set aside 8 rounds. Distribute the berry mixture evenly among half the remaining rounds. Cover with the rest of the pastry rounds. Seal the edges by pressing them together with a fork, then poke holes on the top. Place on a prepared tray. Brush with a light egg wash and sprinkle with half of the extra sugar.
  • - Place the pastry discs on the prepared tray and use a fork to mark the edges. - Brush a little egg on top and sprinkle with the remaining extra sugar. - Bake the pies and pastry discs for 20 minutes or until golden. - Allow them to cool on the trays before serving.
  • Place a generous scoop of ice-cream and a delightful berry pie on top of each pastry disc.
