Berry sponge meringue bake

Wow your loved ones with this elegant and delectable fruit dessert.
Ingredients:
  • 500.00 ml frozen mixed berries, thawed
  • 460g packet round double unfilled sponge cakes (see note)
  • 20.00 ml orange-flavoured liqueur (optional)
  • 3 eggwhites
  • 161.25 gm caster sugar
  • 5.00 gm cornflour
  • 1 tsp white vinegar
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Put the berries in a 5cm-deep, 20cm round cake pan. Add the cake on top and drizzle with liqueur if desired.
  • With an electric mixer, whip egg whites until stiff peaks form, then slowly incorporate sugar, ensuring to beat thoroughly with each addition. Beat for 3 minutes until sugar dissolves completely. Add cornflour and vinegar, and mix for 1 minute. Spread mixture over cake evenly. Using a spatula, create decorative furrows on the surface. Bake until golden for about 10 minutes, then turn off the oven. Allow the cake to cool with the oven door slightly open for 10 minutes. Serve with a dollop of whipped cream.
