Mixed berry & vanilla puddings

Enjoy delectable berry-filled sponge puddings.
Ingredients:
  • 150g (1 cup) self-raising flour
  • 55g (1/4 cup) caster sugar
  • 50g butter, melted
  • 1 egg, lightly whisked
  • 1 tsp vanilla bean paste
  • Icing sugar mixture, to dust
  • 125ml (1/2 cup) water
  • 500g frozen mixed berries, thawed on paper towel
Instructions:
  • Preheat your oven to 180C. Grease six 250ml (1-cup) capacity ovenproof dishes with melted butter and place them on a baking tray.
  • In a medium saucepan over low heat, gently blend sugar and water for 2-3 minutes until sugar dissolves. Increase heat, boil for 1-2 minutes until syrup thickens slightly. Take off heat and add berries, stirring to combine.
  • In a large bowl, mix together the flour and sugar, then create a well in the center. In a separate large jug, combine the milk, butter, egg, and vanilla bean paste. Slowly pour the egg mixture into the flour mixture and stir until well combined. Divide the berry mixture among the prepared dishes and add the pudding mixture on top evenly.
  • Bake in the oven for 25 minutes or until a skewer inserted halfway into the centers comes out clean. Allow to cool for 5 minutes, dust with icing sugar, and serve with double cream if desired.
