Mixed apple & berry sponge pudding

Cozy winter fruit pudding for chilly nights.
Ingredients:
  • 3 Granny Smith apples, peeled, chopped
  • 42.00 gm lemon juice, plus 2 tsp grated lemon zest
  • 330g caster sugar
  • 500g frozen mixed berries
  • 2 eggs
  • 125ml milk
  • 40.00 ml whisky
  • 4.40 gm vanilla extract
  • 150g plain flour
  • 4.00 gm baking powder, sifted
  • Icing sugar, to dust
  • Thick cream mixed with 1 tsp ground cinnamon, to serve
Instructions:
  • Begin by preheating your oven to 160C. In a small pan, combine the apple, juice, and 1 cup (220g) sugar over low heat. Stir for 3 minutes until the sugar dissolves, then continue to cook for an additional 3-4 minutes, stirring occasionally, until the apple softens slightly. Allow the mixture to cool before gently folding in the berries. Transfer everything to a 1.25 litre baking dish and set it aside for the next step.
  • Combine eggs, milk, whisky, lemon zest, and vanilla in a bowl until smooth. In a separate bowl, mix flour, baking powder, and sugar. Slowly add the egg mixture to the dry ingredients, whisk until smooth. Pour batter over fruit and bake for 30-35 minutes until golden and firm.
  • Sprinkle with powdered sugar and enjoy warm with cinnamon-infused cream.
