Summer fruit cobbler: Sweet fruits baked with flaky biscuits for a delicious dessert.
Ingredients:
  • 1 1/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup cold butter or margarine, cut into pieces
  • 1/2 cup milk
  • 1 teaspoon decorator sugar crystals, if desired
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 3 medium peaches, peeled, sliced (about 3 cups)
  • 2 teaspoons grated lemon peel
  • 1 tablespoon lemon juice
Instructions:
  • Preheat oven to 400°F and generously grease a 2-quart glass casserole dish with butter or cooking spray.
  • In a medium bowl, mix together 1 1/4 cups of flour, 1/3 cup of sugar, baking powder, salt, and nutmeg. Add butter and blend until mixture resembles coarse crumbs. Gently stir in milk until just combined, then set aside.
  • In a 2 1/2-quart saucepan, mix 3/4 cup sugar and 2 tablespoons flour. Add blueberries, raspberries, peaches, lemon peel, and lemon juice. Bring to a boil over medium-high heat, stirring constantly. Transfer fruit mixture to a baking dish.
  • Drop 8 spoonfuls of biscuit dough onto the hot mixture and sprinkle sugar crystals over the dough.
  • Bake until biscuits turn a beautiful golden brown, for about 25 to 35 minutes. Allow them to cool for at least 15 minutes before enjoying.
