Moist blueberry buckle cake with rich blueberry flavor and a touch of cinnamon.
Ingredients:
  • 0.5 teaspoon salt
  • 0.75 cup white sugar
  • 0.25 cup unsalted butter
  • 1 large egg
  • 2.5 cups fresh blueberries
  • 0.33333334326744 cup all-purpose flour
  • 0.25 cup unsalted butter, softened
Instructions:
  • Preheat the oven to 350°F (175°C), then grease and flour a 9-inch springform pan.
  • Combine flour, baking powder, and salt by sifting them into a medium bowl.
  • In a large bowl, use an electric mixer to blend sugar, butter, and egg until smooth. Slowly add milk while beating until fluffy. Mix in flour mixture until a stiff batter forms. Carefully fold in blueberries and spread the batter into the prepared springform pan.
  • Prepare the topping by combining sugar, flour, butter, and cinnamon in a bowl until mixture is crumbly. Sprinkle over batter and gently press down with fingertips.
  • Bake in the preheated oven for about 40 minutes, until the topping is golden brown and a toothpick inserted into the center of the cake comes out with moist crumbs.
