Irresistible blueberry muffins with a crunchy sugar topping. Bursting with juicy blueberries in a delectably sweet batter.
Ingredients:
  • 1.25 cups white sugar
  • 0.5 cup unsalted butter
  • 0.5 teaspoon salt
  • 2 cups all-purpose flour, divided
  • 0.5 cup buttermilk
  • 1 pint fresh blueberries - rinsed, drained and patted dry
  • 2 tablespoons white sugar
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) with the oven rack in the middle position. Prepare a muffin pan by spraying the top with nonstick spray and lining with paper liners.
  • In a large bowl, combine 1 1/4 cups of sugar, butter, and salt, and cream them together until light and fluffy. Then, beat in the eggs one at a time.
  • Combine 1 3/4 cups flour with baking powder. Alternate adding the flour mixture and buttermilk into the egg mixture, mixing until just combined.
  • Crush a portion of the blueberries and fold them into the batter. Toss the remaining whole blueberries with a bit of flour then gently fold into the mixture. Divide into muffin cups and sprinkle sugar on top.
  • Bake in the preheated oven for about 30 minutes until golden brown and tops spring back when lightly tapped.
