Indulge in a delightful Tuscan apple cake celebrating the best of the season's apples.
Ingredients:
  • 6 thick slices woodfired bread, crusts removed, cut into cubes
  • 250ml milk
  • 3 eggs
  • 90g caster sugar
  • 60.00 ml (1/4 cup) plain flour
  • 4.40 gm vanilla extract
  • 20.00 gm unsalted butter, melted
  • 250ml cream
  • 2 golden delicious apples, peeled, sliced
  • Icing sugar, to dust
Instructions:
  • Preheat oven to 180°C and grease a 24cm cake pan with a tight-fitting base, or line a regular round cake pan with parchment paper.
  • In a shallow container, layer the bread and drench it in milk, allowing it to absorb for 30 minutes.
  • Combine eggs, sugar, flour, vanilla, and butter in a bowl. Use a hand whisk to mix until smooth. Gradually pour in cream while continuing to beat until well combined.
  • Squeeze the bread to remove excess milk. Arrange the bread in a cake pan, pressing it down firmly. Arrange the apple slices in a circular pattern on top. Pour the egg mixture over the bread and let it soak for 10 minutes before baking.
  • Bake for 50 minutes until beautifully golden and perfectly cooked yet wonderfully moist. Let it cool slightly in the pan, then sprinkle with a layer of icing sugar.
  • Top with a dollop of luxurious whipped cream or a scoop of velvety ice cream before serving.
