Blueberry cobbler: Sweet berries topped with cakey biscuit crust for a perfect summer treat. Choose fresh or frozen blueberries.
Ingredients:
  • 2.5 cups fresh or frozen blueberries
  • 0.5 lemon, juiced
  • 1 cup white sugar, or to taste
  • 0.5 teaspoon all-purpose flour
  • 1 tablespoon butter, melted
  • 1.75 cups all-purpose flour
  • 4 teaspoons baking powder
  • 6 tablespoons white sugar
  • 5 tablespoons butter
  • 1 cup milk
  • 2 teaspoons sugar
  • 1 pinch ground cinnamon
Instructions:
  • Prepare the baking dish by greasing it gently. Combine blueberries with lemon juice and vanilla in the dish. Add sugar and flour, then stir in melted butter. Leave aside.
  • Combine 1 3/4 cups flour, baking powder, and 6 tablespoons sugar in a medium bowl. Use a pastry blender to cut in 5 tablespoons butter until the mixture looks like coarse crumbs. Create a well in the center, pour in milk, and stir just until moistened; the batter should be thick. Add a splash more milk if needed. Cover and rest for 10 minutes before proceeding.
  • Preheat your oven to 375°F (190°C) while you prepare the rest of the recipe.
  • Gently spoon batter over blueberries, allowing some to peek through. Combine 2 teaspoons each of sugar and cinnamon, then sprinkle over the batter.
  • Bake in the oven until the top is golden brown and a knife comes out clean, about 20-25 minutes. Allow to cool slightly before serving.
