Seared tuna steak

Choose fresh tuna with even dark red color and fine, tight grain. Look for it in quality fish markets for the best results, although supermarkets can sometimes have good batches. Serve high-quality fresh tuna rare or very pink to preserve its natural flavor and avoid overcooking.
Ingredients:
  • 1 small dried red chilli
  • 1 tablespoon coriander seeds
  • ½ a clove of garlic
  • 1 good handful of fresh basil
  • 1 good handful of fresh coriander
  • olive oil
  • 1 lemon
  • 4 x 225 g tuna steaks ideally 2cm thick, from sustainable sources
Instructions:
  • Crush the chili and coriander seeds in a mortar and pestle. Mince the garlic, finely chop the herb leaves, and combine them in the mortar with a drizzle of oil and lemon juice. Season with salt and pepper. Season both sides of the tuna steaks with the herb mixture. Heat a griddle or frying pan until very hot. Sear the tuna for 45-60 seconds per side until toasted and browned. Divide the steaks and serve with salad, chips, or boiled potatoes and a lemon wedge. Enhance with marinated sun-dried tomatoes, olives, and basil. Enjoy the endless possibilities!
