Velvety butternut squash soup infused with rich flavors of onion, garlic, thyme, cumin, and allspice in a savory chicken broth.
Ingredients:
  • 1.5 tablespoons butter
  • 0.5 onion, sliced
  • 2 cloves garlic
  • 2 sprigs fresh thyme
  • 0.5 butternut squash - peeled, seeded, and cut into 1-inch cubes
  • 4 cups chicken stock
  • 0.5 cube chicken bouillon
  • 1 pinch ground cumin
  • 1 pinch ground allspice
Instructions:
  • In a large pot, melt butter over medium heat. Sauté onion, garlic, and thyme until onion softens, about 5 minutes. Add squash and chicken broth, simmer until squash is tender for 10 to 15 minutes. Crumble bouillon into the soup and season with cumin, allspice, salt, and pepper. Remove from heat.
  • In batches, blend the soup in a blender, filling only halfway. Secure the lid with a kitchen towel and pulse briefly to start blending, then switch to purée. Transfer the puréed soup to a serving bowl, or use a stick blender straight in the pot for convenience.
