Indulge in homemade creamy baked cheesecake with a strawberry twist for special occasions or lazy weekends. Customize with your favorite toppings like chocolate or berries for a memorable treat.
Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 2 containers (8 oz each) whipped cream cheese spread, softened
  • 1 1/4 cups sugar
  • 2 teaspoons vanilla
  • 2 tablespoons lemon juice
  • 5 eggs
  • 1 pint (2 cups) sour cream
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • 1 tablespoon lemon juice
  • Sliced fresh strawberries
  • Strawberry sundae syrup
  • Whipped cream
Instructions:
  • Preheat the oven to 325°F. Combine crust ingredients in a small bowl and press onto the bottom of an ungreased 10-inch springform pan. Bake for 10 minutes, then allow to cool for 3 to 5 minutes.
  • In a large bowl, use an electric mixer on medium speed to blend both cream cheeses, 1 1/4 cups sugar, 2 teaspoons vanilla, and 2 tablespoons lemon juice until smooth. Then, on low speed, add eggs one at a time, beating well after each addition. Finally, mix in the flour until smooth.
  • Spread the luscious filling over the buttery crust and bake for 55 minutes until golden. Let it cool on a rack for 10 minutes. While it cools, combine the creamy sour cream layer ingredients in a small bowl.
  • Spread the sour cream mixture smoothly on top of the cheesecake and bake for an additional 10 minutes. After baking, use a knife to gently loosen the edges of the cheesecake. Let the cheesecake cool on a rack for about 2 hours, then refrigerate for at least 3 hours or overnight after covering it.
  • To plate, carefully detach the side of the pan. Top each serving with fresh strawberries, a swirl of strawberry sundae syrup, and a generous dollop of whipped cream. Chill in the refrigerator until ready to serve.
