Creamy mac and cheese with cottage cheese and sour cream.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 1 (16 ounce) package cottage cheese
  • 0.5 cup butter
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 (10 ounce) can whole peeled tomatoes with juice
Instructions:
  • Preheat oven to 350°F (175°C).
  • 1. Fill a large pot with salted water and bring to a rolling boil. Add the macaroni, cook uncovered, stirring occasionally, until al dente, about 8 minutes. Drain well.
  • In a large baking dish, mix together cottage cheese, sour cream, butter, and cooked macaroni. Add Cheddar cheese and gently stir. Top with tomatoes and pour tomato liquid over the casserole. Season with salt and black pepper to taste.
  • Bake in the preheated oven for 20 minutes. Mix macaroni and cheese thoroughly. Bake until lightly browned and bubbly, about 15 minutes more.
