Italian sausage and veggie fettuccine in red wine beef broth with basil and oregano.
Ingredients:
  • 1.5 pounds sweet Italian sausage
  • 2 cloves garlic, minced
  • 2 small onions, chopped
  • 2 (16 ounce) cans whole peeled tomatoes
  • 1.25 cups dry red wine
  • 5 cups beef broth
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 2 zucchini, sliced
  • 3 tablespoons chopped fresh parsley
  • 1 (16 ounce) package spinach fettuccine pasta
Instructions:
  • Brown the sausage in a large pot over medium heat. Remove with a slotted spoon and drain on paper towels, reserving 3 tablespoons of fat in the pan.
  • Sauté garlic and onion in the flavorful fat for a couple of minutes. Add tomatoes, wine, broth, basil, and oregano. Transfer the mixture to a slow cooker and gently fold in sausage, zucchini, bell pepper, and parsley.
  • Cover and slow-cook for 4-6 hours on Low heat.
  • Boil lightly salted water, cook pasta until al dente (about 7 minutes), then drain and add to the slow cooker. Simmer briefly, season with salt and pepper, and serve.
