Simple pecan shortbread cookies with a buttery, vanilla-infused twist perfect for any occasion.
Ingredients:
  • 0.75 cup pecans
  • 1 cup butter, softened
  • 0.75 cup white sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1.75 cups all-purpose flour
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly heated cooking environment.
  • Evenly distribute the pecans on a baking sheet.
  • Bake in the preheated oven for 5-10 minutes until aromatic and golden. Allow to cool completely, then roughly chop in a food processor.
  • In a large bowl, use an electric mixer to whip butter until creamy. Add sugar and continue beating until mixture becomes light and fluffy. Mix in egg yolk, vanilla, and salt until fully combined. Gently incorporate pecans. Fold in flour until dough forms.
  • Shape the dough into two thick logs, measuring 1 1/2 inches in thickness. Individually wrap each log in wax paper and chill in the refrigerator for at least 4 hours or overnight.
  • Preheat the oven to a perfect 350 degrees F (175 degrees C) and gracefully prepare a lined baking sheet with parchment paper.
  • Unwrap the dough logs and slice into 1/3-inch thick rounds. Arrange on the baking sheet.
  • Bake in the preheated oven until edges turn a beautiful golden brown, for about 12 to 15 minutes.
