Tender and juicy roast beef made with round roast cooked to rare or medium-rare perfection.
Ingredients:
  • 3 pounds beef eye of round roast, at room temperature
  • 0.5 teaspoon kosher salt, or more to taste
  • 0.5 teaspoon garlic powder, or more to taste
  • 0.25 teaspoon freshly ground black pepper, or more to taste
Instructions:
  • Assemble all ingredients needed for the recipe.
  • Preheat your oven to 375°F (190°C) for a perfectly cooked dish.
  • Allow the roast to come to room temperature. Secure the roast at 3-inch intervals with cotton twine to prevent dryness and ensure even cooking. Set the roast on a rack in a baking pan.
  • Combine salt, garlic powder, and pepper in a small bowl and generously massage the flavorful mixture into the meat.
  • Roast in the oven until the center reaches 120 to 125 degrees F (49 to 52 degrees C), about 60 minutes or 20 minutes per pound for different sizes.
  • Take out of the oven and move onto a cutting board. Gently cover with foil and allow to rest for 15 to 20 minutes to allow the juices to redistribute.
  • Cut and present for enjoyment.
