Elevate winter vibes with a twist on classic chili using tender chicken breast and creamy navy beans.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 large jalapeno peppers, seeded and chopped
  • 1 tablespoon all-purpose flour
  • 3 (15 ounce) cans navy beans, drained
  • 1 (10 ounce) can green enchilada sauce
  • 1 cup chicken broth
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
Instructions:
  • In a large soup pot, heat oil over medium-high heat. Add chicken and cook until no longer pink, approximately 4 minutes. Add onion and jalapeno peppers; cook until onion turns translucent, about 4 minutes. Then, stir in flour until well combined.
  • Combine navy beans, enchilada sauce, chicken broth, oregano, chili powder, and cumin in a pot and bring to a boil. Simmer over low heat for about 25 minutes to allow the flavors to meld together.
