Best-ever brown sugar ham

Stress-free Christmas ham - simple steps for the perfect holiday feast.
Ingredients:
  • 270.00 gm brown sugar
  • 23.40 gm dijon mustard
  • 82.50 ml brandy
  • 8kg leg of ham
  • Whole cloves, to decorate
Instructions:
  • Position oven shelf on the lowest level and preheat oven to 180C/160C fan-forced.
  • In a small saucepan over medium heat, mix together 1 cup of sugar, mustard, brandy, and 1/2 cup of cold water. Stir until the sugar is dissolved. Simmer the mixture for about 5 minutes or until slightly thickened. Remove from heat and set aside.
  • Begin by delicately slicing through the ham rind 8cm from the shank using a small sharp knife. Gently slide your thumb under the rind to detach it from the fat, peel it back, and discard. Next, score the fat in a diamond pattern and place 1 clove in the center of each diamond for decoration. To keep the shank end from burning, wrap it in foil. Finally, position the ham on a spacious wire rack inside a large roasting pan.
  • *Brush 1/4 of the glaze over the top of the ham. Sprinkle half of the sugar over the ham and press gently to form a crust. Bake for 15 minutes. Drizzle with more glaze (avoid brushing to prevent lifting sugar) and bake for 30 minutes, drizzling more glaze halfway through. Sprinkle the remaining sugar over the ham, drizzle with the last of the glaze, and bake for another 15 minutes until golden and caramelized. Rest for 15 minutes before serving.*
