Flavorful pinto beans stewed with smoky ham hock, finished with a tangy touch of tomato sauce and brown sugar for a delectable dish.
Ingredients:
  • 6 cups water, or more as needed to cover
  • 1 smoked ham hock
  • 1 teaspoon kosher salt
  • 1 (6.5 ounce) can tomato sauce
Instructions:
  • Place pinto beans in a large bowl and cover with water. Soak for 4 hours, changing water every 30 to 45 minutes. Drain.
  • In a large pot, bring 6 cups of water to a boil. Add pinto beans, ham hock, and kosher salt to the pot, making sure all ingredients are covered by at least 1 inch of water. Add more water if needed.
  • Lower heat to medium-low and gently simmer until beans are perfectly tender, which should take about 2 to 3 hours.
  • Separate the ham hock from the beans, cut the meat from the bone, chop it, and add back to the pot.
  • Combine the tomato sauce and brown sugar with the beans, allowing them to simmer until tender and flavors are well combined, approximately 1 hour.
