Indulge in fluffy, flavorful mashed cauliflower with cheese and chives - a quick and tasty side dish in just 30 minutes.
Ingredients:
  • 1 medium head cauliflower (2 lb), broken into 1-inch florets
  • 2 cloves garlic, finely chopped
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons reduced-fat sour cream
  • 1 tablespoon sugar
  • 1 tablespoon butter or margarine, softened
  • 1 teaspoon chicken bouillon granules
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons chopped fresh chives
Instructions:
  • In a 4-quart Dutch oven, bring 1 inch of water to a lively boil. Add cauliflower and garlic and bring back to a boil. Lower the heat, cover, and gently simmer for 10 to 15 minutes until the cauliflower is incredibly soft and tender. Drain thoroughly and return to the Dutch oven.
  • Blend the rest of the ingredients with the cauliflower until smooth in a food processor. Top with extra chopped fresh chives for a flavorful garnish, if desired.
