Easy vegan and gluten-free stuffing pleases all guests, simple to make from scratch.
Ingredients:
  • 16 ounces vegan, gluten-free bread, cubed
  • 0.5 cup vegan butter (such as Earth Balance®)
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 tablespoon dried parsley
  • 1 teaspoon dried sage
  • 1 teaspoon ground thyme
  • 0.75 teaspoon garlic powder
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon dried rosemary
  • 0.25 teaspoon dried marjoram
  • 2 cups vegetable broth
  • aluminum foil
Instructions:
  • Preheat the oven to 350°F (175°C) and evenly distribute bread cubes on 2 baking sheets.
  • Bake in the preheated oven for about 10 minutes until the bread cubes are dry and lightly toasted. Then, transfer them to a large mixing bowl.
  • In a saucepan over medium-high heat, melt vegan butter. Saute celery and onion until softened but with a bit of snap, about 5 minutes. Season with parsley, sage, thyme, garlic powder, salt, pepper, rosemary, and marjoram, stirring constantly for 1 minute. Bring to a boil with vegetable stock, stirring occasionally. Remove from heat once boiling.
  • Drizzle the flavorful stock, vegetables, and herbs over the bread cubes in the mixing bowl, stirring delicately until fully incorporated. Cover with foil to allow the flavors to meld for 5 minutes, then uncover, fluff up the stuffing with a fork, and enjoy!
