Better Than Pumpkin Pie

Savory butternut squash masquerading as pumpkin perfection.
Ingredients:
  • 1.5 cups peeled and cubed butternut squash
  • 1 cup lightly packed brown sugar
  • 1 tablespoon cornstarch
  • 1 egg, beaten
  • 1 cup evaporated milk
  • 1 teaspoon ground cinnamon
  • 1 pinch ground allspice
  • 1 pinch ground cloves
  • 1 pinch ground ginger
  • 1 (9 inch) unbaked pie shell
Instructions:
  • In a saucepan, cover the squash with water and bring to a boil. Simmer over medium heat for about 15 minutes until tender. Drain and allow to cool.
  • Preheat oven to 350°F (175°C) for the perfect baking temperature.
  • Combine butternut squash, brown sugar, cornstarch, egg, milk, cinnamon, allspice, cloves, ginger, and nutmeg in a blender or food processor until smooth. Pour the mixture into the unbaked pie shell.
  • Bake in a preheated oven for 50 minutes or until a table knife inserted in the center comes out clean.
