Budget-friendly apple cinnamon muffins - a delicious breakfast indulgence.
Ingredients:
  • 225.00 gm wholemeal self-raising flour
  • 150.00 gm self-raising flour
  • 5.00 gm ground cinnamon
  • 90.00 gm firmly packed brown sugar
  • 250.00 ml fruit nut toasted muesli
  • 56.88 gm extra virgin olive oil
  • 120g tub apple puree
  • 325.00 gm buttermilk
  • 2 small pink lady apples, unpeeled, very thinly sliced crossways
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare a 12-hole muffin pan with paper cases.
  • In a large bowl, sift the flours. Add in the cinnamon, sugar, and muesli. Mix well. In a separate large jug, combine the egg, oil, apple purée, and buttermilk. Pour the egg mixture into the flour mixture and stir gently until just combined. Avoid over-mixing.
  • Portion out the mixture into the muffin holes and garnish each with a slice of apple. Bake for 20 to 25 minutes until a skewer inserted into the center of a muffin comes out clean. Let them cool on a wire rack and enjoy warm or at room temperature.
