Impress guests with undetectable spinach-infused cupcakes made using Betty Crocker™ Devil's Food Cake Mix.
Ingredients:
  • 1 box (9 oz) frozen chopped spinach
  • 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • 3/4 cups water
  • 3 eggs
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting or 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting
Instructions:
  • Preheat the oven to 375°F (350°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups, then lightly spray each liner with cooking spray.
  • Microwave spinach according to package instructions. Rinse with cold water until cooled and drain well. In a food processor, blend cooked spinach into a smooth paste. Measure out 1/2 cup of the spinach purée, saving the rest for later use.
  • In a large bowl, use an electric mixer to combine cake mix, spinach purée, water, and eggs for 2 minutes on medium speed. Remember to scrape the bowl occasionally. Divide the batter evenly among the muffin cups.
  • Bake for 13 to 18 minutes until a toothpick inserted in the center comes out clean. Let cool for 10 minutes before transferring to a cooling rack. Allow cupcakes to cool completely for about 30 minutes, then frost.
