Indulgent rocky road with gooey marshmallows and chewy licorice, perfect for a treat you won't want to give away.
Ingredients:
  • 125g plain chocolate biscuits (see tip)
  • 60g unsalted butter, melted
  • 1 x 375g pkt white chocolate melts
  • 1 x 250g pkt mixed marshmallows, halved (see tip)
  • 100g raspberry licorice, coarsely chopped (see tip)
  • 15g (1/4 cup) flaked coconut
  • 4.40 gm flaked coconut, extra
Instructions:
  • Grease a 18 x 28cm slab pan with melted butter. Line the base and 2 long sides with overhanging non-stick baking paper.
  • In a food processor, pulse the biscuits until finely crushed. Add the butter and pulse until fully combined.
  • Transfer the biscuit mixture into the prepared pan and firmly press it down using the back of a spoon. Chill in the fridge.
  • Place the chocolate in a microwave-safe bowl and melt in the microwave, stirring every minute, until smooth.
  • Combine marshmallow, licorice, coconut, and chocolate in a bowl. Mix gently until combined. Spread the mixture over the biscuit base using a spatula. Sprinkle with extra coconut. Chill in the fridge for 30 minutes or until set. Cut into small squares before serving.
