"Upgrade your French toast for a healthier and delicious breakfast."
Ingredients:
  • 150ml milk or unsweetened almond milk
  • 100g (about 1 medium) banana, chopped
  • 1.25 gm ground cinnamon
  • 8 slices seedy wholegrain bread
  • 40.00 ml raw buckwheat
  • 8.40 gm coconut oil
  • 130g (1/2 cup) Greek-style yoghurt or coconut yoghurt
  • 125g fresh raspberries
  • Seeds of 1/2 pomegranate
  • 27.00 gm maple syrup
  • Maca powder, to dust (optional)
Instructions:
  • Combine milk, banana, eggs, and cinnamon in a blender and blend for 20-30 seconds until smooth. Pour mixture into a large dish. Add bread slices, pressing down to soak them well. Let sit for 10 minutes.
  • Toast buckwheat in a small frying pan over medium-low heat, stirring constantly for 5 minutes or until golden. Transfer to a bowl and set aside.
  • Heat half of the oil in a non-stick frying pan over medium heat. Cook 4 soaked bread slices for 2-3 minutes per side until golden and cooked through. Transfer to a plate and cover loosely with foil to keep warm. Repeat with the rest of the oil and bread.
  • Serve the French toast on plates, then layer with yogurt, raspberries, and pomegranate seeds. Drizzle with maple syrup, sprinkle with buckwheat, and dust with optional maca powder.
