Crispy vegan spinach meatballs with nutritional yeast and breadcrumbs, perfect for baking or simmering in sauce.
Ingredients:
  • 1 (10 ounce) package frozen chopped spinach
  • 2 tablespoons water
  • 2 (16 ounce) packages Beyond Meat® Beyond Beef® plant-based ground
  • 0.75 cup nutritional yeast
  • 0.75 cup vegan bread crumbs (such as Aleia's)
  • 4 tablespoons tomato paste
  • 5 cloves garlic, minced
  • 1 tablespoon dried oregano leaves
  • 1 tablespoon dried basil leaves
  • 1 teaspoon onion powder
  • 0.5 teaspoon ground black pepper
  • 4 tablespoons olive oil, divided, or more as needed
Instructions:
  • In a 1-quart microwave-safe casserole dish, mix together frozen spinach and water. Cover and microwave on high for 5 minutes, stirring halfway through. Break up any clumps with a fork and microwave for an additional minute. Drain in a colander. Once cooled, squeeze small bunches of spinach to remove excess water and transfer to a large mixing bowl.
  • Combine Beyond Beef, nutritional yeast, bread crumbs, tomato paste, minced garlic, oregano, basil, onion powder, salt, and pepper with spinach. Use your hands to mix well. Shape mixture into 1 1/4-inch meatballs.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a large rimmed baking sheet by lining it with parchment paper.
  • In a large Dutch oven over medium heat, heat 1 tablespoon of olive oil. Brown about 12 meatballs in batches, turning frequently to ensure even cooking, for about 5 to 7 minutes. Transfer the crispy meatballs to a baking sheet and continue with the remaining batches.
  • Bake in the oven until heated through, about 30-35 minutes or until the center reaches 165 degrees F (74 degrees C).
