Try our satisfying brekkie pizza - a delicious and cost-effective twist on the classic 'big breakfast'. Perfect for feeding a crowd!
Ingredients:
  • 6 short-cut bacon rashers
  • 2 Classic Pork Sausages, casings removed
  • 100g brown mushrooms, sliced
  • 2 large wholemeal pita breads or pizza bases
  • 125ml passata
  • 100g cheese
  • 60g pkt Baby Spinach
  • 100g vine-ripened cherry tomatoes
  • 6 Free Range Eggs
  • Baby rocket leaves, to serve
Instructions:
  • Preheat the oven to 200°C. In a large non-stick frying pan over medium-high heat, cook the bacon for 2 mins on each side until golden. Transfer to a paper towel-lined plate. Cook the sausage in the pan, breaking up into lumps with a wooden spoon, for 5 mins until golden. Transfer to the plate with the bacon. Finally, add the mushrooms to the pan and cook for 1-2 mins until tender, stirring occasionally.
  • Grease 2 large baking trays. Arrange pita breads or pizza bases on the trays. Evenly spread passata, half of the pizza cheese, spinach, bacon, sausage, mushrooms, and tomatoes. Sprinkle with the rest of the cheese. Crack 3 eggs onto each pizza.
  • Bake until the cheese is melted and the crust is crisp, about 12-15 minutes. Top the pizzas with arugula and slice into wedges before serving.
