Savory shrimp and rice casserole with a tangy twist from tomatoes, mushroom soup, and French onion soup. Perfect alongside any seafood dish.
Ingredients:
  • 0.5 cup butter
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 0.5 cup minced green onion
  • 1.5 pounds shrimp, peeled and deveined
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10.5 ounce) can condensed French onion soup
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 2 cups white rice
  • 1 tablespoon salt
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large saucepan over medium heat, melt butter. Saute onion, bell pepper, and green onion until tender for about 10 minutes. Add shrimp, cream of mushroom soup, French onion soup, and tomatoes with green chile peppers to the mixture and bring to a boil.
  • Take the saucepan off the heat, then mix rice and salt into the shrimp-soup. Transfer the rice-shrimp mixture into a baking dish and tightly cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover, stir, and continue baking until bubbly, approximately 30 more minutes.
