Ingredients:
  • 2 tablespoons oil, divided
  • 8 ounces uncooked medium shrimp
  • 8 ounces boneless, skinless chicken breasts, cut into bite-size pieces
  • 4 ounces andouille sausage or kielbasa, cut into half-moon slices
  • 2 medium ribs celery, chopped
  • 2 small red and/or green bell peppers, chopped
  • 1 large clove garlic, finely chopped
  • 1 (5.6 ounce) package Knorr® Cajun Sides™ - Red Beans & Rice
Instructions:
  • Heat 1 tablespoon of oil in a large skillet over medium-high heat. Season shrimp with salt and pepper to taste. Cook shrimp until just pink on both sides, about 1 minute each side. Remove and set aside (shrimp will be partially cooked).
  • Season the chicken with salt and pepper to taste. Brown the chicken on all sides in the same skillet for about 5 minutes. Remove the chicken and set aside.
  • Drizzle the last tablespoon of oil into the skillet and cook the sausage, stirring occasionally, until beautifully browned in about 4 minutes.
  • Sauté celery in skillet until translucent, around 3 minutes. Then, add peppers and cook until slightly softened, about 2 minutes. Finally, stir in garlic and cook until fragrant, about 30 seconds.
  • Combine water and Knorr® Cajun Sides™ - Red Beans & Rice in a skillet. Bring to a boil, cover, and simmer for 5 minutes. Add chicken and shrimp, cook for 3 - 4 more minutes until rice is tender. Allow to rest for 2 minutes before serving.
