Delightful white chocolate treats for parties or lunch boxes.
Ingredients:
  • 100g butter, chopped
  • 180g block white chocolate, chopped
  • 41.20 gm milk
  • 141.90 gm caster sugar
  • 2 eggs, lightly beaten
  • 250.00 ml plain flour
  • 112.50 gm self-raising flour
  • 82.50 ml Bright sprinkles
  • 100g white chocolate, cut into 1.5cm pieces, extra
  • 62.50 ml Bright sprinkles, extra, to decorate
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 18cm x 28cm rectangular slice pan and line the base and sides with baking paper, leaving a 2cm overhang.
  • In a saucepan over medium heat, melt butter, chocolate, and milk together until smooth, stirring occasionally. Allow the mixture to cool for 10 minutes.
  • Combine caster sugar, egg, plain flour, and self-raising flour until thoroughly mixed. Fold in sprinkles until just incorporated. Spread half of the batter onto the base of the prepared pan. Scatter extra chocolate on top and gently press it into the batter. Layer the remaining batter over the chocolate, smoothing it out. Sprinkle extra sprinkles on top for a finishing touch.
  • Bake for 30-35 minutes until golden brown and the center of the blondie is firm to the touch. Allow it to cool in the pan before cutting into squares and serving.
