Elevate classic franks and beans with Chef John's gourmet twist: a zesty sauce with veggies, cannellini beans, and premium hot dogs.
Ingredients:
  • 1 pound hot dogs
  • 2 tablespoons unsalted butter
  • 1 yellow onion, diced
  • 1 fresh poblano chile pepper, diced
  • 1 rib celery, diced
  • 2 tablespoons minced fresh cayenne pepper, or other hot red pepper
  • 1 tablespoon light brown sugar
  • 0.25 cup ketchup
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon Worcestershire sauce
  • 2.5 cups chicken broth, or as needed
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 0.25 cup sliced green onions
Instructions:
  • Score the hot dog skins on all 4 sides without cutting through. This will prevent them from curling when cooked. Cut into 1/2-inch rounds.
  • In a large pot over medium heat, melt butter. Add onions, poblano pepper, celery, and cayenne pepper. Season with salt and pepper. Sauté until vegetables are soft and onions are translucent, about 5-7 minutes.
  • Add hot dog slices and sauté until warmed through and the flavorful fat from the hot dogs melds with the butter, approximately 3 minutes. Incorporate brown sugar, ketchup, mustard, and Worcestershire sauce into the pot. Pour in chicken broth and gently stir in beans. Bring the mixture to a simmer over higher heat; then reduce heat to low and simmer for about 30 minutes to blend the flavors. Use a wooden spoon to crush some beans against the side of the pot to thicken the stew. If the stew becomes too thick, adjust the consistency by adding more broth.
  • Before serving, gently fold in fresh, vibrant green onions for a burst of color and flavor.
