Elevate the classic millionaire's slice with an extra layer of indulgent cookie dough atop buttery shortbread and gooey caramel.
Ingredients:
  • 175g butter, softened
  • 70.95 gm caster sugar
  • 1 egg yolk
  • 250.00 ml plain flour
  • 49.50 gm self-raising flour
  • 395g can sweetened condensed milk
  • 53.60 gm golden syrup
  • 200g dark chocolate, chopped
  • 9.20 gm vegetable oil
  • 250g butter, softened
  • 225.00 gm firmly packed brown sugar
  • 53.75 gm caster sugar
  • 4.40 gm vanilla extract
  • 562.50 ml plain flour
  • 1.20 gm table salt
  • 400g dark chocolate, finely chopped
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, leaving a 5cm overhang on all sides.
  • With an electric mixer, whip up 150g of butter, sugar, and egg yolk until fluffy. Add sifted flours to the mixture and stir until just combined. Evenly press the mixture into a pan and bake for 15 to 18 minutes.
  • Combine condensed milk, golden syrup, and remaining butter in a small saucepan over medium heat until the mixture turns golden brown and thickened, about 15 minutes. Quickly pour the caramel over the base in the pan, smooth the surface, and bake until dark golden, about 10 minutes. Allow to cool, then refrigerate for at least 3 hours until chilled.
  • Cream together butter, sugars, and vanilla using an electric mixer until light and fluffy. Gradually sift in flour and salt, then stir until just combined. Add chocolate chips and knead gently to distribute evenly. Spread the cookie dough over the caramel layer and chill in the refrigerator for 30 minutes.
  • 1. Combine chocolate and oil in a microwave-safe bowl. Microwave on HIGH, stirring every 30 seconds, until melted and smooth (1-2 minutes). Pour over cookie dough layer. Chill for 1 hour until firm. Cut into fingers and enjoy.
