Indulgent mac and cheese with spicy bison sausage and pepperoni seasoning.
Ingredients:
  • 2 cups dried elbow macaroni
  • 0.5 cup chopped green pepper or frozen peas
  • 0.33333334326744 cup finely chopped onion
  • 2 tablespoons all-purpose flour
  • 0.25 teaspoon salt or to taste
  • 0.125 teaspoon black pepper
  • 2 cups milk
  • 1.5 cups shredded American and Cheddar cheese blend
  • 1 cup shredded part-skim mozzarella cheese
  • 4 ounces bison sausage with pepperoni seasoning, chopped
Instructions:
  • Prepare the macaroni according to the package instructions, and add green pepper or peas in the last 3 minutes of cooking. Once cooked, drain the macaroni and keep it covered to stay warm.
  • In a large skillet over medium heat, melt butter until sizzling. Sauté onion in the fragrant butter until tender, about 4 to 5 minutes. Add flour, salt, and black pepper, then swiftly pour in milk. Whisk tirelessly until the sauce becomes thick and bubbles form. Continue whisking for an extra 2 minutes. Finally, lower the heat to a gentle simmer.
  • Stir in a blend of American and cheddar cheese along with mozzarella cheese until the sauce is smooth and the cheese is melted. Mix in the bison pepperoni and sauce with the pasta, heating through before serving.
