Apple and sage bison sausage brunch strata with eggs and bread cubes - a flavorful autumn dish.
Ingredients:
  • Nonstick cooking spray
  • 1 pound bison breakfast sausage
  • 2 tart cooking apples, cored and chopped
  • 8 eggs
  • 2 cups milk
  • 1 tablespoon chopped fresh sage leaves
  • 0.25 teaspoon black pepper
  • 1 (12 ounce) loaf firm-textured French or Italian bread, cut into 1-inch cubes
  • 1 cup shredded provolone cheese
Instructions:
  • Preheat your oven to 350°F. Grease a 3-quart rectangular baking dish with cooking spray and set it aside. In a large skillet, brown the bison sausage and onion over medium heat. Add the apple and cook for an additional 5 minutes. Remove any excess fat.
  • In a large bowl, combine eggs, milk, sage, and pepper and whisk until well blended.
  • Spread the bread cubes in the baking dish, layer with bison sausage mixture and cheese, gently combine to distribute evenly, and pour over the egg mixture.
  • Bake without a cover for 40-45 minutes or until a knife comes out clean when inserted near the center. Allow it to rest for 10 minutes before serving.
