Beef stir-fried with bitter melon, onion, garlic, ginger, and savory black bean sauce.
Ingredients:
  • ice cubes
  • 1 bitter melon, seeded and sliced
  • 2 teaspoons soy sauce, divided
  • 2 teaspoons cornstarch, divided
  • 0.25 teaspoon baking soda
  • 6 ounces beef, sliced
  • 1 tablespoon oil
  • 1 teaspoon oil
  • 0.5 onion, sliced
  • 1 tablespoon chopped fresh ginger
  • 1 tablespoon black bean sauce
  • 1 tablespoon oyster sauce
  • 1 pinch white sugar, or to taste
  • 0.75 cup water
  • 1 teaspoon water
  • salt to taste
Instructions:
  • Prepare an ice bath by filling a bowl with ice and salted water. Boil a pot of lightly salted water. Quickly cook the bitter melon in the boiling water for 2 minutes until tender yet firm; then drain. Submerge the melon in the ice bath to extract bitterness for about 1 hour. Finally, drain the melon before use.
  • In a bowl, combine 1 teaspoon soy sauce, 1 teaspoon cornstarch, and baking soda. Add beef and coat evenly. Refrigerate for 1 hour to marinate.
  • 1. Heat wok or large skillet over high heat until smoking. Add 1 tablespoon of oil. Spread beef evenly in the wok; cook until browned on both sides, around 2 minutes each. Remove beef. Add 1 teaspoon of oil and heat. Stir in onion, garlic, and ginger; cook and stir until fragrant, about 30 seconds. Mix in bitter melon until combined, approximately 1 minute.
  • Combine the black bean sauce with the melon mixture. Add the rest of the soy sauce, oyster sauce, and sugar. Pour in 3/4 cup of water, cover, and simmer for 2 to 3 minutes to marry the flavors. Uncover, stir in the remaining cornstarch mixed with 1 teaspoon of water until thick.
