Black & blushing Worcestershire fillet

"Juicy, savory BBQ beef that looks charred but tastes heavenly when cooked to perfection."
Ingredients:
  • 600-700 piece of fillet steak
  • 2 heaped teaspoons French mustard
  • 8-10 tablespoons Worcestershire sauce plus extra for drizzling
  • a good drizzle of extra virgin olive oil plus extra to serve
  • 2 sprigs of fresh rosemary
  • unsalted butter
  • olive oil
  • thyme and rosemary flowers optional
Instructions:
  • One day ahead or a few hours prior to cooking, place all ingredients in a large sandwich bag (ensure the rosemary is finely chopped). Remove air from bag, then massage ingredients into the meat. Refrigerate for a few hours or overnight. 1½ hours before cooking, take beef out of fridge to reach room temperature in a cool spot. Preheat barbecue. Soak chilled butter in cold water. When ready to cook, pat dry the fillet, coat in olive oil, and sear on hot barbecue, turning every minute for 8-10 minutes. Move to cooler area of grill to finish cooking for another 4-5 minutes, turning each minute. For desired doneness, adjust cooking time accordingly. Let meat rest, then garnish with butter, Worcestershire sauce, olive oil, and herbs. Slice and serve at the table, seasoning slices with meat juices.
