Try these easy vegan no-cook tacos for a quick and delicious lunch option.
Ingredients:
  • 125g (1/2 cup) canned black beans, rinsed, drained
  • 1 roma tomato, finely chopped
  • 1/2 small Lebanese cucumber, finely chopped
  • 1/4 small avocado, finely chopped
  • 20.00 ml chopped fresh coriander
  • 10.60 gm fresh lime juice
  • 2.30 gm olive oil
  • 1.25 gm sweet paprika
  • 3 baby cos lettuce leaves, to serve
Instructions:
  • Mix together beans, tomato, cucumber, avocado, and coriander in a bowl.
  • In a small bowl, combine the juice, oil, and paprika. Pour into the bean mixture, season, and mix well. Serve in lettuce leaves.
