Wholesome summer salad with black beans, juicy tomatoes, sweet mango, creamy avocado, and fresh cilantro. Tossed in zesty lemon juice, salt, and pepper for a burst of flavor.
Ingredients:
  • 2 (15 ounce) cans black beans, drained and rinsed, or more to taste
  • 2 avocados - peeled, pitted, and cubed
  • 2 yellow mango - peeled, pitted, and cubed
  • 2 tomatoes, chopped, or more to taste
  • 0.5 red onion, chopped
  • 0.25 cup chopped fresh cilantro, or to taste
  • 2 lemons, juiced
  • salt and ground black pepper to taste
Instructions:
  • In a large bowl, toss together black beans, avocados, mango, tomatoes, red onion, and cilantro. Drizzle with lemon juice and season generously with salt and pepper. Gently mix until ingredients are evenly coated and combined.
