Whip up a delicious black bean beef stir-fry for a simple and satisfying weeknight meal.
Ingredients:
  • 60ml (1/4 cup) peanut oil
  • 2 cloves garlic, thinly sliced
  • 4cm piece ginger, cut into thin strips
  • 2 eschalots, thickly sliced
  • 3 spring onions, trimmed, cut into 3cm lengths
  • 5 x 100g beef minute steaks, thinly sliced
  • 200g snow peas, trimmed
  • 1 red banana chilli, (see note) seeded, thinly sliced
  • 1 yellow banana chilli, (see note) seeded, thinly sliced
  • 225g jar black bean sauce
  • Roasted cashews, to serve
  • Steamed white rice (optional), to serve
Instructions:
  • In a hot wok, sizzle garlic and ginger in oil until garlic turns lightly golden, about 1 minute.
  • Add the eschalots, spring onions, and beef to the pan and stir-fry until the eschalots have softened, about 2 minutes.
  • Toss in snow peas, banana chillies, and black bean sauce. Stir-fry for an additional 3 minutes until sauce is warm and veggies are crisp-tender. Season with salt and pepper to taste.
  • Portion the mixture into individual bowls, sprinkle generously with crunchy cashews, and pair with rice, if desired.
