Black Beans and Ham

Indulge in hearty ham and bean stew topped with cornmeal biscuits for a comforting meal.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped (1 cup)
  • 1/2 cup chopped red or green bell pepper
  • 2 cans (15 oz each) Progresso™ black beans, undrained
  • 2 cups cubed fully cooked ham
  • 2 teaspoons chili powder
  • 1/3 cup cornmeal
  • 2/3 cup milk
  • 1/2 cup shredded Cheddar cheese (2 ounces)
Instructions:
  • In a 4-quart Dutch oven, warm the oil over medium heat. Sauté the onion and bell pepper until tender, stirring occasionally. Add in the beans, ham, and 1 teaspoon of chili powder. Bring to a boil, then simmer on low heat.
  • Combine Bisquick mix, cornmeal, milk, and remaining 1 teaspoon of chili powder in a medium bowl until a soft dough forms. Spoon 6 dollops onto the simmering bean mixture.
  • Cook uncovered for 10 minutes, then cover and cook for an additional 8 minutes. Sprinkle with cheese and cover, cooking for about 2 more minutes until the cheese is melted.
