Whip up a quick and flavorful Island-inspired ham and black bean soup for dinner!
Ingredients:
  • 2 cups water
  • 1 cup diced fully cooked ham
  • 1/2 cup frozen whole kernel corn
  • 1 can (15 ounces) Progresso™ black beans, rinsed and drained
  • 1 can (14 1/2 ounces) Mexican-style stewed tomatoes, undrained
  • 2 tablespoons hot-pepper (jalapeño) jelly
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground ginger
Instructions:
  • Prepare a 3-quart saucepan by spraying it with cooking spray and heating it over medium heat. Sauté the onion in the saucepan for 2 to 3 minutes until it is crisp-tender.
  • Add the rest of the ingredients and bring to a boil. Reduce the heat and simmer uncovered for 15 minutes, stirring occasionally.
